Salsa di Parma Bread Dip
This Italian inspired dip will bring delight to any meal. The addition of freshly grated Parmesan cheese makes it over the top good.

For Pasta Dressing: Mix 1 tablespoon Salsa di Parma Bread dip with 1/4 cup extra virgin olive oil. Add to 1 lb cooked, drained and cooled pasta or make it gluten-free and use with spaghetti squash. For Bread Dip: Mix 1 tablespoon Salsa di Parma Bread dip with 1/4 cup extra virgin olive oil. Add 1 tablespoon of freshly grated Parmesan cheese. Serve with slices of warm crusty bread.

For Roasted Vegetables: Mix 1 tablespoon Salsa di Parma Bread dip with 1/4 cup extra virgin olive oil. Toss with the cut vegetables and bake on a foil-lined baking sheet for 20-30 minutes at 400 degrees. For Marinated Cheese: Mix 1 tablespoon Salsa di Parma Bread dip with 1/4 cup extra virgin olive oil. Pour over cubed mozzarella cheese and sun-dried tomatoes. Infuse the mixture in the refrigerator overnight. To serve top a cube of cheese with a bite-size tomato slice and spear it with a toothpick or rosemary stem. Garnish with parsley. Spinach & Artichoke Dip Serves 4-6 1 small onion, chopped 2 tsp Extra Virgin Olive Oil ½ cup canned artichoke hearts, chopped 10oz package frozen spinach (thawed, drained, and chopped) ½ cup sour cream 2 TBS mayonnaise 1/3 cup Parmesean cheese 2 TBS s.a.l.t. sisters Salsa di Parma Bread Dip Butter, for greasing Preheat oven to 375. In a small pan, heat EVOO over medium heat, add onions and sauté until soft. In a medium bowl, combine the cooked onions and the rest of the ingredients; mix well. Lightly grease a medium baking pan with butter. Transfer dip mixture into dish; bake for 15-20 minutes, or until heated through. Serve with pita bread or crackers.
